The Captain is Back

            Capt. Billy’s has been a part of Waco’s restaurant scene for the better half of 3 Decades, opening in 1977. Serving up freshly ground, specially seasoned and handmade burger. It has had a rough patch in the mid 2000’s due to mismanagement and nearly fell; but in July of 2009 it was purchased by father and son Ronnie and Trent Neumann. I have previously worked with Trent, starting up “Austin’s on the Ave.’ grill section. I only stayed there for a few months, and then I moved on to something more fitting for myself. 

When I heard that Trent was moving on from Austin’s and looking to purchase Capt. Billy’s, I knew good things were gonna happen. I felt that Trent would be able to restore the Capt. back to its place as One of Waco’s Top Burger joints.

            Trent and Ron kept the look of the place pretty much spot on to how it has always looked, just with an updated TV and a neat chalk board for updates and their contests. They are always friendly and have great service, plenty of places to sit and the place is always clean. Over all great atmosphere.

            Earlier last week Trent told me that he was introducing a new burger at the restaurant, but he wouldn’t divulge any information on it…. no matter how hard I pried. Today he finally revealed what it was and was offering it up for anyone to try (purchase), so I left work a tad early so I could go by and try it out. I ordered a double meat, with cheese, lettuce, pickles and mayo… so nothing to really distract from the flavor. Now based on what I wrote, that really doesn’t sound that special… but it’s not what is on the burger that is unique… it’s what is INSIDE the burger. The meat patty isnt just any ole fashion patty… oh no… it is Ground Beef and, get this, Ground BACON!!!  Ahh ahh haa Ahhh ahhh (or how ever you spell the heavenly hum).

 Now, I’ve seen burgers made with Turkey, brisket, salmon, lean beef, fatty beef, filet mignon, kobe, mushrooms, even tofu and vegan (heaven help us on those)…. But, I’ve never come across a ground bacon and beef burger. They look like any other fresh hamburger patty raw and cooked; but if you look real close you can see the bits on bacon throughout it. You can smell the sweet savory aroma of the bacon. I bite down in to this holy creation and it is awesome.  You get the full bacon flavor (that isn’t over powering) minus that sometimes annoying chewy bit that causes you to pull out the whole piece of bacon and you never have a part of the burger that doesn’t have the bacon in it. You still get the same great Capt. Billy burger flavor, with bacon in every bite. Needless to say it was a great experience and I can’t wait to get my mitts on another one; though sadly with my diet, that won’t be any time too soon. If you love bacon, and come on- WHAT AMERICAN DOESN’T, you should definitely pop by and snag one, you won’t be disappointed

Details on Capt. Billy’s Facebook page and Ill post the winner on here when announced. My name recommendation is “The Captain’s E.O.B” – E.O.B. stands for Essence of Bacon.

While this new burger will probably become my new stand by, I had another favorite; “The Western Billy Burger.” Which consists of their season burger patty, BBQ sauce and a couple of onions rings; It is a most tasty burger. I also frequently get their basic bacon, cheese burger with jalapenos… always a great choice. As I mentioned earlier, they use freshly ground beef with a nice ‘fat to meat’ ratio; that they season and shape… ready to be grilled on their flattop and served to you.  

I’ve also had plenty of other menu items there including; CFS sandwich, grilled chicken sandwich, chicken tenders and a basic salad. All were alright; the grilled chicken is pretty good with some honey mustard on a jalapeno cheese bun. Though, I wasn’t really fond of the CFS sandwich.  Then again, Capt. Billy isn’t known for their sandwiches and salads, they are known for their delicious burgers…. And that’s what I would recommend to anyone who goes by there.

Last week when I was there I tried their new Turkey Burger; ground turkey patty, lettuce, pickle and of course bacon with a side of their waffles fries. It’s a decent sized burger, great seasoned and turkey flavor, and rather juicy for a turkey burger; I’ve come across some bad turkey burgers, and this is NOT one. With my diet, I will definitely be hitting this burger up more often. My favorite side to get of theirs is the waffle fries, which are similar to Chick-Fil-A’s, but have Cajun seasoning and a much crunchier texture that I really like. Their regular French fries are pretty tasty too, with their crunchy texture and light seasoning. When I grab dessert, I go for one of their Blue Bell Ice Cream milk shakes… which is obviously also a good choice to have with your burger. It’s whatever flips your wig.
            Next time you are craving a burger, why not give the Captain a try? They have everything a burger lover could want, plus some. Now that I’m done I can finally go enjoy the rest of my Holy Bacon Burger.

*Oh and did I mention they carry Jalapeno Cheese Buns? Only one of the best hamburger buns I have EVER EATEN! * If you love jalapenos, cheese and a hint of spicy sweet… You have to try one of these. They are Most Excellent.
